Our beloved grandfather, Poppy Sol, started this business in an open-air market. Three generations later, we’re still bringing smiles to our customers' faces.
Made from raw chickpeas ground into a flour, this is a great substitute for wheat flour. These can be used to make falafel, pancakes, or even fritters.
Ingredients: 3 cups Water, 2 cups Chickpea flour, 1 tsp Coarse Sea Salt, 2-1/4 to 2-1/2 cups Olive oil, 1/4 cup Fresh Parsley, chopped, 2 tbsp Parmigiano-Reggiano (finely grated), Parchment paper, Deep-fat thermometer (optional).
Cooking Directions: Lightly oil an 8x4 in. loaf pan (6 cup capacity) and line with parchment paper, leaving a 2-in overhang at each end.
Whisk together water, chickpea flour, sea salt, and 2 tablespoons oil in a 2-1/2 to 3-qt heavy saucepan until smooth, then cook over moderate heat, stirring constantly with a wooden spoon (to prevent lumps forming), until think and mixture pulls away from side of pan, 20-25 min. Transfer mixture to loaf pan, smoothing top.
Cool, uncovered, then chill, surface of mixture covered with plastic wrap, until firm, at least 3 hours.
Lift chickpea block out of pan using parchment and transfer to a work surface. Gently flip over block and discard parchment, then pat dry. Cut block crosswise into 1/4 in. thick slices for panelle.
Preheat oven to 300 F.
Heat 1/2 inch oil (about 2 cups) in a deep 10-in heavy skillet until it registers 375 F on thermometer, then fry panelle in 5 batches, carefully turning occasionally with tongs, until golden and puffed, 3-5 minutes per batch, and transfer to paper towels to drain. Keep warm on a baking sheet in oven while frying remaining batches.
Arrange panelle on a platter and sprinkle with parsley and cheese. Serve immediately.
There are approximately 3 3/4 cups per pound.

“You guys are awesome! Delivery was fast, on time, and products look fantastic! (and I love the box designs too). Can't wait to start baking 'gluten free!'”
Amy, Shirley, Massachusetts May 8, 2012
“I absolutely love nuts.com! After trying all sorts of gluten free products, I refuse to shop for my pasta, flours, or any other gluten free items I may want at a grocery store anymore. The quality is better, and the prices are fantastic! ”

“You are the ONLY place I could find chickpea flour!! Thank you so much, and I will sure be back! Love your nuttiness!”

“Received my first order today, and I can tell already it won't be my last! I have sampled everything except the coffee already and...WOW! If the coffee tastes half as good as it smells...mmmmmm!
My order was shipped super fast - I ordered late on Monday and it was here on Friday (standard shipping) the fudge even held up well with the heat, even though I wasn't really worried about it (who doesn't like rich, gooey fudge?) With fantastic products and this kind of service, it's easy to see why your company has stood the test of time! Thanks!”

“WoW! What service, I placed my order on Monday and received my order on Tuesday FANTASTIC Customer Service, You people can teach a lot of other companies a few things about service, this is my second order I will be back.”
Dory, Elkton, MD March 9, 2011
“When I was first shopping online for gluten-free products I clicked on a site that had an explanation as to why I had to wait four weeks to receive my order. I kept looking. Then I found Nuts Online. I ordered one evening and received my order two business days later. That's SERVICE!
I also appreciate the heavy resealable bags in which your products are packaged. They are heavy enough for long-term storage and they stand up on the refrigerator shelf. There is no need to repackage everything at home in storage containers as I do with the flimsy plastic bags most health food stores provide.
Fresh products, great packaging and fast, friendly service: I'll be back.
Lara, Melbourne, FL March 1, 2011
“All products we received were terrific! There are many options my gluten free, allergy heavy family can enjoy. Among my children's favorites: dried strawberries, green bean chips and dried kiwi. Everything arrived quickly and extremely fresh. My only complaint...my kids went through everything so fast, we ran out of snacks in a matter of days (thought it would last weeks)! Thanks so much!!”
Libby, Goodlettsville, TN February 23, 2011
“Fast, tasty, and we will do business again! I love the packaging also.”
