When I first opened the bag I was disappointed that I didn’t catch the characteristic smoky aroma coming from the grain, but oddly enough that slightly smoky flavor comes through once it’s cooked. Super stoked to have a freekeh source since it can be really hard to find. Be sure to rinse and soak if you don’t want to find the occasional bit of charred hull in your mouth. My normal source of Einkorn grain was out this year. So happy to find Einkorn here at Nuts.com. Einkorn has a different gluten structure than wheat and takes a learning curve to know how to bake with it. I like the taste better than wheat. I'd never seen or heard of Kaniwa before and gave it a try because I love new things - this did not disappoint. Texture-wise I find it more similar to amaranth than quinoa (which it's related to), but taste-wise, it's got a roasty, nutty flavor all its own.Guinevere, Portland, OR

Organic Kaniwa:
This is surprize-a little seed almost as small as Teff, and yet healthy and full of nutritional value. It does taste similar to Quinoa, which I like very much, but it is unique as well. Cooks quickly and no rinsing required (quinoa has saponins so you need to rinse the grain), before cooking. I mix cooked Kaniwa with cooked brown rice, for example, for extra nutrition and fun!
