Soooo this morning I tried the chestnut pancakes. Have never cooked with chestnut flour before, but husband is from WV & their family have chestnut trees on their property, but mostly they eat them as is. “Last night we made genoese chestnut pasta recipe using some of the flour. The corzetti pasta shapes turned out beautiful. We served it with pesto and pecorino cheese with some wilted chard. Naturally, we had some good wine. Dessert consisted of two sorbets I made earlier. The flavors were blood orange and black pepper and also avocado lime and coconut.
