cup Mung Beans |

large onion diced |

tsp ground garlic |

fistful grounf pork |

spinach leaves |

salt to taste |
Cooking Directions: |

Boil the mung beans in two cups water till tender to taste but not mushy (adjust water if necessary).

In a separate kettle, saute garlic, onion and ground pork and salt. When onion is translucent and pork is cooked, mix it into the mung beans.

Turn off.
Put in the spinach last and leave the pot uncovered to preserve the greenness of the leaves.

Mung Beans
Mung beans are a small cylindrical bean with a sharp green color. Mung beans are used primarily for sprouting and produce the sprouts most commonly found in Chinese cuisine. They also can be soaked overnight, cooked, and eaten just like other beans.
