Cooking Directions: |

Put quinoa and water in a heavy 2 quart saucepan, bring to a boil over medium-high heat, reduce the heat and cook for 15 minutes or until all the liquid has been absorbed. Add milk and sugar, cook for 5 minutes after it comes back to a boil, add pineapple and cinnamon, cook until thickened, about 5 minutes.

In a small bowl blend cornstarch and 2 tablespoons of water to make a thickener.

Stir in cornstarch mixture and cook, stirring for a couple of minutes or until thickened. Transfer to a bowl and let it cool.

Fold in yogurt and vanilla extract into pineapple mixture, chill. Serve in dessert glasses topped with chopped nuts and a strawberry.
Makes 8 servings.
