||Low Card Baking Mix
|1 1/4 cup
||Milk or Creme
||Packets of your favorite low carb sweetener
||Heat griddle to 350 degrees Fahrenheit. Lightly coat griddle with spray oil. In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, and sweetener). Make a well in the center of the dry ingredients and add the eggs, water and vanilla. Mix with a fork or whisk until blended, approximately one minute.
||Pour batter onto heated seasoned griddle. Cook until bubbles form on the raw side. Flip and continue to cook until steam stops rising from pancake, approximately one minute per side.
||Serve warm with your favorite low carb filling.
||Yields: 10 large crepes.
