Recipe for Gluten-Free Pancake Cookies

Recipe Ingredients:
1 cup  Sugar
1/2 cup  Margarine
1/2 cup  Soymilk
1 tsp  Vanilla
2 cups  Gluten-Free Pancake Mix
1/2 cup  Chocolate Chips

Cooking Directions:
1.  Preheat oven to 350F. Cream together sugar and margarine until smooth with electric mixer, then add milk and vanilla and mix until blended. Add pancake mix and chocolate chips and combine with liquid ingredients until blended. Place on greased cookie sheet and bake 10-12 minutes. Makes 2 dozen cookies.

2.  For other cookie options use any combination of following ingredients to equal 1/2 cup to replace the chocolate chips: Shredded Coconut, Sliced Almonds, Currants, Spices, Cranberries, Walnuts, Raisins, Pecans.
