| Recipe Ingredients: |
| 1 pound |
pinto beans |
| |
sea salt to taste |
| 2 Tbs. |
Canola Oil |
| 1 |
large onion chopped |
| |
large pot of water |
Cooking Directions: |
| 1. |
Do not pre-soak the pinto beans. Rinse pinto beans and remove any rocks or imperfect beans. Use a large pot with a thick bottom and a lid such as a Dutch Oven.
|
| 2. |
Place beans in the large pot of water filled almost to the top. Bring beans to a boil and reduce heat to medium/low. The beans will continue to cook, and you will have to add more hot water until beans are tender. When tender, add sea salt to taste, 2 Tbs. canola oil and 1 large onion chopped.
|
| 3. |
Continue to simmer and as soup begins to thicken, you may have to lower temperature. Be sure that there is an adequate amount of water, cooking down to make a thick red soup.
|
| 4. |
When done about 3 hours later, cook down the juice. You can remove the lid when the beans are done and turn the temperature back up to cook down the soup.
