Flour, Unbleached All-Purpose |

Potato Starch Flour |

| 1/4 cup |
Sesame Seeds |
| 1 1/2 cups |
Cherries (Dried or Tart) |

Pecans (Whole, Toasted) |
Cooking Directions: |

Preheat oven to 350F.

Blend tofu with next 4 ingredients with a fork.

Combine with cornmeal, flour, starch, baking powder, soda and salt; mix well and set aside for 10 minutes.

Fold in sesame seeds, dried cherries and pecans. Pour into an oiled loaf pan and bake 45 minutes.

These hulled sesame seeds are lighter in color than the natural variety. Often found on top of rolls, these seeds are ideal for baking and cooking.
Sour (Tart) Cherries
Tart Montmorency cherries are a great dried fruit snack that can be used for baking. The cherries are lightly sweetened.
