A member of the wheat family, Kamut is considered the "high energy grain" because it contains 40% more protein than the national average for wheat. As this grain hasn't been altered by modern plant breeders, it retains its ancient nutrition, flavor and goodness. It contains elevated levels of vitamin E, Thiamin, Riboflavin, phosphorus, magnesium, zinc, pantothentic acid, copper and complex carbohydrates. Kamut is excellent in cereals, baked goods, and eaten as a side dish.
This long grain is best cooked in a slow cooker similar to rice and must be simmered for up to one hour.
