Recipe for Pistachio Cookie Recipe

Recipe Ingredients:
cups flour
1-1/2  teaspoons baking powder
1/2  teaspoon salt
2/3  cup butter
cup sugar
egg
teaspoon vanilla
1/2  teaspoon almond extract
1/8  teaspoon green food color
1/2  cup Pistachios meat, small diced

Cooking Directions:
1.  Combine flour, baking powder and salt in a mixing bowl. Sift together and set aside.

2.  In another large bowl cream butter, sugar, egg, vanilla and almond extract until mixture is light and fluffy. Add the green color and pistachio meats to about 1 cup of the dough mixture.

3.  Form the green dough into a roll and chill. Form the white dough into a rectangle 10"x4" and chill.

4.  When dough firms, wrap white dough around green dough. Slice cookies 1/8" thick.

5.  Place on ungreased cookie sheet about 3" apart. Bake at 375 F for 8 to 10 minutes. Dough may be rolled in chocolate or multi-colored nonpareils before slicing and baking.
