| Recipe Ingredients: |
| 2 |
cups cubed chicken( I use the pre-cooked Mesquite Chicken from Sam's Club) |
| 3 |
cups uncooked tricolor spiral pasta |
| 2 |
celery ribs diced |
| 3/4 |
cup onion |
| 1/2 |
cup diced green pepper ( I use red and green for color) |
| 1 1/2 |
cups mayonnaise |
| 3/4 |
cups packed brown sugar |
| 1 |
tbsp cider vinegar |
| 1 1/2 |
tsp salt |
| 1 1/2 |
tsp lemon juice |
| 2 |
cups cup Roasted and Salted Cashews |
Cooking Directions: |

Cook chicken breasts and let cool.

Cook pasta according to package directions and rinse in cold water.

Chop chicken and place in a large bowl. Add the pasta, celery, onions and peppers. In a small bowl, combine the mayonnaise, brown sugar, vinegar, salt and lemon juice; pour over pasta mixture and toss to coat. Cover and refrigerate at least 2 hours. Just before serving, stir in cashews.
