Recipe for Apricot Truffles with Chia Seeds (Gluten-Free)

Recipe Ingredients:
1/2 Cup  Almonds
1 Cup  Dried apricots
1/2 Cup  Honey dates
1 Tbs.  Lemon zest
1 tsp.  Vanilla
1/2 Tbs.  Chia seeds

Cooking Directions:
1.  Soak the almonds for 12 - 48 hours and blanch.

2.  Process the almonds, apricots and dates through a champion juicer using the solid plate or a food processor using the "s" blade.

3.  Add chia seeds, lemon zest and vanilla.

4.  Form dough into small balls and chill before serving.
