It’s also high in minerals like folate, potassium, magnesium, and iron which support a wide range of metabolic processes in the body. Tomato powder is also rich in dietary fiber which aids the digestive tract and promotes a feeling of fullness. Protective antioxidants present in tomatoes, like lycopene, defend cells against damage caused by free radicals, and may reduce the risk for chronic diseases such as heart disease, stroke, and cancer.

Tomato Powder Storage
Tomato powder should be stored in a cool, dry place and can be kept for up to a year. To avoid clumping, keep the powder away from exposure to heat and moisture. It can be stored for longer periods in the freezer. Tomato pastes and sauces can be stored in the fridge for up to a week.

But I love to add it to dried milk, basil, oregano, a little corn starch; and it makes a fantastic soup in a jar as a gift. I like to give that in a tomato basket with some good Italian breadsticks which make a fantastic treat. They can make 1 cup at a time which is perfect.
