Old fashioned small pearl tapioca. Use to make an old fashioned tapioca pudding like Grandma used to make!

Soak tapioca in water for 30 minutes in a 1-1/2 quart saucepan. Add milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling. Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 3/4 cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla. Serve warm or chilled, plain or with fruits, nutmeg or coconut mixed in. Makes 3-1/2 cups (4 servings).

“I have a feeling that this place could put us in the "poor house", trying this and that!!! So far everything we've tasted is deeeeelicious, can't wait to brew up some of the coffees!! Have homemade tapioca pudding cooking using the small pearl tapioca, trying a new recipe in crock pot so keeping our fingers crossed that it turns out! The dried fruits are to die for, especially those dark chocolate covered strawberries!!! Ingredients

Tapioca. Directions: Soak 1/2 cup of tapioca overnight in 1 1/2 cups cold water. Mix 1 qt. milk and 3/4 cup sugar. Bring to boil. Drain water off tapioca, add tapioca to milk. Cook and stir till tapioca is clear (at least 30 min.) Then combine 3 beaten eggs, 3/4 cup sugar and 3/4 tsp. vanilla. Add to above mixture and bring to a full boil. Makes about 2 quarts.

Packaged in the same facility as peanuts, tree nuts, wheat, soy, and milk products.

Storage

Store at room temperature for up to 1 year.
