Large Pearl Tapioca
Old fashioned large pearl tapioca. Use to make an old fashioned tapioca pudding like Grandma used to make!
Size #40, 1/5" diameter
Soak 1/2 cup tapioca in water overnight in a 1-1/2 quart saucepan. Add milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling. Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 3/4 cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla. Serve warm or chilled, plain or with fruits, nutmeg or coconut mixed in. Makes 3-1/2 cups (4 servings).

Pearl Tapioca. For a great Pudding: Mix 1 qt. milk and 3/4 cup sugar. Bring to boil. Drain water off tapioca, add tapioca to milk. Cook and stir till tapioca is clear (at least 30 min.) Then combine 3 beaten eggs, 3/4 cup sugar and 3/4 tsp. vanilla. Add to above mixture and bring to a full boil. Makes about 2 quarts.
Packaged in the same facility as peanuts, tree nuts, wheat, soy, and milk products.
Store in a cool dry place for up to 1 year. It is ok to refrigerate.
