Large Pearl Tapioca
Old fashioned large pearl tapioca. Use to make an old fashioned tapioca pudding like Grandma used to make!
Size #40, 1/5" diameter
Soak 1/2 cup tapioca in water overnight in a 1-1/2 quart saucepan. Add milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling. Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 3/4 cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla. Serve warm or chilled, plain or with fruits, nutmeg or coconut mixed in. Makes 3-1/2 cups (4 servings).

“OK, so on Thanksgiving morning I read this email from you saying my large-pearl tapioca was delivered by the post office. I had already gotten Wednesday's mail from the mail box--the tapioca wasn't there. Argh! But before I write to you that the USPS failed your expectations, I better check the mail box again. A miracle had happened. The USPS did a second delivery yesterday--you predicted it! My tapioca was there as you promised! Now I have to wait overnight soaking it before I can cook and enjoy it. I hope it doesn't fall apart like so many of large pearl tapiocas do from other manufacturers. Enjoyed the comments on your shipping carton and the "'lil something" found in the carton. Pearl Tapioca. For a great Pudding: Mix 1 qt. milk and 3/4 cup sugar. Bring to boil. Drain water off tapioca, add tapioca to milk. Cook and stir till tapioca is clear (at least 30 min.) Then combine 3 beaten eggs, 3/4 cup sugar and 3/4 tsp. vanilla. Add to above mixture and bring to a full boil. Makes about 2 quarts.
Packaged in the same facility as peanuts, tree nuts, wheat, soy, and milk products.
Store in a cool dry place for up to 1 year. It is ok to refrigerate.
