German Black Rye Bread Mix
This mix makes a dark, hearty bread. Spread with mustard and cover with smoked ham, or maybe Bauernschinke if you can get it.
German Black Rye Bread Mix
1.60 lb mix (approx. 5 cups)
2 tbsp. dry yeast
1 3/4 cups warm water
Add yeast to water & let sit 5 min. Add mix & stir till all drys are wet. Cover & rest 25 min. Mold for pan. Proof (let rise) 45-50 min. or 1 inch above pan at 100 degrees with enough moisture so dough is not dry to touch. Bake at 375-400 degrees for approx. 25-30 minutes. Cut recipe in half for bread machines.

“OMG......I was totally amazed with this Mix....I am not big on mixes....but this just seemed like such an easy way to make pumpernickel rye, so I tried it....I double the recipe.....and make one very big loaf.....increase the baking time to 45 minutes....brush with an egg wash after second rising.....the finished loaf, is definitely Bakery Quality a thing of beauty....wish I could send a Photo.....Very Impressive....Delicious....Dark and Hearty....Loveeeeeeee!”
