Organic hard spring wheat is made from the spring kernels of northern United States grown wheat. Organic hard red spring wheat has a protein content of 15% or better. These berries can be cooked as a cereal, sprouted for salads or milled into flour with grinders.

Cooking Instructions: 1/4 cup Organic Hard Spring Wheat Berries, 3/4 cup water. In microwave: In a 1 1/2 quart covered casserole, bring 3/4 cup water to a boil on high for 3 minutes. Stir in 1/4 cup Organic Hard Spring Wheat Berries. Cook, uncovered on high for 1 1/2 minutes. Stir. Cook uncovered on high for 2 minutes. Let stand a few minutes before serving.

There are approximately 2 1/2 cups per pound.
