Parboiled rice is rice that has been boiled in the husk. Parboiling makes rice easier to process by hand and improves its nutritional profile. Parboiling rice drives nutrients, especially thiamine, from the bran into the grain, so that parboiled white rice is 80% nutritionally similar to brown rice.
1 cup Parboiled Rice
2 cups water
2 tbsp oil or butter (salt & pepper to taste)
In a covered saucepan, bring water to a boil. Add oil & seasoning to rice. Add rice to saucepan, stir only once, return to a boil. Reduce heat to low, cover & let simmer 15 min. Keep covered, remove from heat & steam 5 min. Fluff with fork and serve.
