Popular in Italy, Lupini beans make a nutritious and tasty treat.
These large-sized beans are dried and do need to be cooked.
Pick over beans to remove any debris. Soak overnight, drain and rinse. Cover by several inches with fresh water and simmer for an hour.
Drain, rinse well, and cover with salted water (about 1 tablespoon per quart of water). Refrigerate.
Repeat this process every day for 5 days, or until the soaking brine is no longer bitter.
Beans will keep for weeks, covered with lightly salted water and refrigerated.
To serve as a snack, drain desired quantity of beans, drizzle with olive oil and freshly ground black pepper.

These were something I also enjoyed as a child when we would go to NY to visit the Italian side of the family (they have all kinds of strange things to eat)
Last Christmas my sister had found one of the precooked and soak jars and it was wonderful to have them again. I've always heard the younger adults say "you can find anything on the web" and sure enough, there they were. If it hadn't been for my sister bringing that jar from a specialty shop I wouldn't have known the proper name for since they had always been referred to as just lubeans.
