Organic and all natural Green Lentils. Cook in soups, stews, or by themselves. Makes for an extremely healthy side dish.

To cook beans on your stove-top, combine soaked or dried beans, water, oil or fat, and seasonings in a saucepan or pot of appropriate size. Bring the beans to a boil, reduce the heat, then cover and simmer until beans are tender. This takes 30 minutes to 3 hours, depending on the bean variety. Check the beans occasionally to see if they are covered with the cooking liquid. If there is so much liquid absorption and evaporation that the top of the beans becomes exposed, add very hot tap water to the pot to cover the beans. When dried beans boil, a foam forms on the top of the cooking liquid. This foam is water-soluble protein released from the beans and it will be absorbed back into the bean cooking liquid. It is not necessary to remove the foam. (To keep the foam down when cooking beans, add 1 Tablespoon of butter, drippings (consider flavor), or vegetable salad oil, for each cup of beans.)

“Attention: the Dark Chocolate Dipped Oranges are out-of-this-world. Chocolate-orange fans will -not- be disappointed. In fact, I tried to make this very combination myself by using your organic dried oranges to candy myself (very time-consuming) and some 70% dark chocolate. Needless to say, this was less of a hassle! So, as soon as I got word (via Facebook) that these were a newly-available product, I ordered! How's that for social media's influence on a devoted customer? Of course, we prefer preservative-free and organic, but they looked--and taste--just too divine to resist, in any case. Treat yourself.

The Organic Split Peas are wonderful and--with added carrots, onion, garlic, potato, and spices--make an awesomely thick pea soup that rivals any professional bowl! I am hoping to achieve a similar culinary result with the Organic Green Lentils I received today. Great prices!

We also LOVE your Organic Assorted Energy Squares! Since ordering the assortment, we've gotten full-sizes of the Chocolate Paradise (PERFECT name -- *laden* with dark chocolate chips!), Lemon Pop (tangy!) and Chocolate Goji (love the small sample size). This time, we got the Apricot Cranberry by itself. I'm sure it will not disappoint.
