Sometimes called shell beans, these cranberry beans are not just beautiful to look at, they are delicious to eat. Great with pasta or sauteed with diced tomatoes cranberry beans have a unique slightly nutty taste. They make excellent beans in soups and stews.
For basic preparation, Presoak beans over night. cover beans with water in a 3 - 4 quart pan, bring to a boil and simmer for 15 - 20 minutes. When done, drain and season with salt and freshly ground pepper. They can be served hot with butter or olive oil, but are particularly good served at room temperature with olive oil, lemon juice and chopped fresh parsley. This is similar to the way beans are served in Italy as part of an antipasto tray and makes a great addition to a mix of cheeses, olives and sausages for an appealing appetizer.

I'm so glad that I found this site. I've been looking in all our grocery stores for the past few years for cranberry beans and can't find them anywhere. I don't know why they quit selling them but I guess they all have. I've been taking care of borders since 1974 and when I would fix a large pot of beans I would mix 2 lb of pinto and 1 lb of cranberry beans cooked with 1 lb of bacon. Just yummy. The cranberry beans make them so much creamier. I always have homemade bread with them. For years now I keep searching and saying "my, my I wish I could find my cranberry beans." I thank God and you folks that I finally found them. Shipping is extremely fast and I will be fixing a large pot today or tomorrow. Can't wait to give our taste buds a shock.

My father, who was raised in Providence, RI, passed down a great recipe: boil then simmer the beans in a pot with corn freshly cut off the cob, throw in a few pieces of salt pork, add freshly ground salt and pepper. Get the water down to a soupy consistency by a long simmering, and VOILA! Serve hot, or cold, or room temperature.”
